Celebrate summer with the tangy, garlicky goodness of our local Collard Greens. This recipe was developed in collaboration with Black Food Sovereignty Coalition (BFSC).

Stewed with a confetti of sweet bell peppers, fresh garlic, and sautéed onions, these special collard greens are served in a mildly spicy broth – and are 100% vegan and gluten-free. Add them to your favorite Yumm! Bowl, try with organic brown rice and organic red beans, or enjoy as a side.

Collard greens are a leafy cultivar of Brassica oleracea, the same species as many common vegetables, including cabbage, kale, and broccoli. A popular comfort food in the South, many recipes around the world feature these greens cooked low and slow by simmering, braising, or steaming to soften and deeply flavor the chopped leaves.

Black Futures Farm (BFF), a project of the Black Food Sovereignty Coalition, is a 1.15 acre community farm in Portland staffed by volunteers and resident farmers. BFF is a nonprofit that functions as a hub that brings Black identified/diasporic and Continental African people together to grow food and cultivate community using ancestral practices and innovation. They strive to confront systemic barriers to food, place, and economic opportunities. Creating sustainable food systems that generate long-term financial prosperity, BFSC organizes networks that encourage resource sharing, skill-building, and leadership development among BIPOC farmers, food suppliers, and entrepreneurs.

The organization also brings a variety of locally grown agricultural products to market, offers farm education, and creates programs to share intergenerational food traditions.

Our purpose at Café Yumm! is to “nourish humanity and the world,” and that means working with organizations like the Black Food Sovereignty Coalition in support of food justice.
